So cute and easy to make, these zucchini pennies are the perfect side dish for any meal. Make sure not to overcrowd the pennies, they will grill better with a bit of room between them.
Baked Zucchini Cheese Pennies
Servings: 4 servings
Ingredients
- 3 medium zucchini, sliced into ½-inch thick rounds
- 2 tbsp olive oil
- 1½ tsp Italian seasoning
- ½ tsp chilli flakes
- 1 tsp garlic powder
- ½ cup grated parmesan
- Fresh basil
- Salt and freshly ground pepper
Instructions
- Preheats over to 350℉. Line a baking sheet with parchment paper (if using aluminium foil, spray with non-stick cooking spray).
- Place zucchini rounds in large bowl. Add oil, Italian seasoning, chilli flakes, garlic powder, salt and pepper. Mix well.
- Lay the zucchini rounds on prepared baking sheet, in a single layer.
- Sprinkle with Parmesan cheese.
- Bake for 10-12 minutes (until golden on top, soft in the middle).
- Broil for 2-3 minutes longer to make it crispier on top (keep a close eye on it).
- Sprinkle with fresh basil and serve warm.
