Basil Pesto with Walnuts

Homemade pesto is so easy to make and versatile. Serve it on your favourite pasta, pizza, or sandwiches. I prefer to use walnuts instead of the traditional pine nuts since I always have walnuts on hand, and they’re much less expensive than pine nuts. For an added flavour boost, toast the walnuts and garlic in a pan before tossing in the food processor.

Equipment

  • Food processor

Ingredients

  • cup walnuts
  • 3 garlic cloves
  • 2 cups fresh basil leaves, packed
  • ½ cup freshly grated Parmesan or Romano cheese
  • ½ tsp salt
  • ¼ tsp freshly ground pepper
  • cup olive oil

Instructions

  • In a food processor, pulse walnuts and garlic.
  • Add basil, cheese, salt and pepper. Pulse several times until smooth, scraping the sides with a rubber spatula as needed.
  • Slowly pour in olive oil using the feed tube.
