Chick Pea Salad with Tomatoes & Artichoke Hearts

This is a healthy mediterranean salad with a zesty lime and cilantro flavour. If you don’t like cilantro, you can substitute with parsley.

Ingredients

  • 1 can chick peas, rinsed and drained
  • 4 marinated artichokes hearts, chopped
  • 1 medium tomato, chopped
  • 3 tbsp fresh cilantro, chopped
  • 2 limes (juice and zest)
  • 1 tbsp olive oil
  • salt and peper to taste

Instructions

  • In a large bowl, toss together chick peas, artichoke hearts, tomatoes, cilantro, lime juice and zest, and olive oil. Season with salt and pepper to taste.
  • Refrigerate until ready to serve.
