This is a healthy mediterranean salad with a zesty lime and cilantro flavour. If you don’t like cilantro, you can substitute with parsley.
Chick Pea Salad with Tomatoes & Artichoke Hearts
Servings: 4 servings
Ingredients
- 1 can chick peas, rinsed and drained
- 4 marinated artichokes hearts, chopped
- 1 medium tomato, chopped
- 3 tbsp fresh cilantro, chopped
- 2 limes (juice and zest)
- 1 tbsp olive oil
- salt and peper to taste
Instructions
- In a large bowl, toss together chick peas, artichoke hearts, tomatoes, cilantro, lime juice and zest, and olive oil. Season with salt and pepper to taste.
- Refrigerate until ready to serve.
