An office favourite, we all counted the days until Linda’s next batch of butter tarts! Easy to make, especially if you use the pre-packaged frozen shells.

Ingredients

  • 12 frozen butter tart shells, thawed
  • 1 cup brown sugar
  • 2 tbsp butter, melted
  • 1 egg
  • 1 pinch of salt
  • 2 tbsp corn syrup (or maple syrup)
  • tsp vanilla
  • ½ cup raisins
  • 2 tbsp hot water

Instructions

  • Preheat oven to 400℉.
  • Place the shells on a baking sheet.
  • Mix all the ingredients together.
  • Spoon mixture into the shells, filling each ⅔ full.
  • Bake until filling is bubbly and pastry is golden, about 15 minutes.
