Purple Cabbage Coleslaw
Servings: 8 servings
Ingredients
- 3 tbsp mayonnaise
- 1 tbsp sour cream
- 1 tbsp white wine vinegar
- 1 tsp Dijon mustard
- ¼ of a purple cabbage, shredded (about 4 cups)
- 1 medium carrot, coarsely grated
- 1 apple, thinly sliced or diced
- ⅓ cup raisins
- salt and pepper to taste
Instructions
- Mix the mayonnaise, sour cream, vinegar and mustard in a large bowl. Season with salt and pepper.
- Add the cabbage, carrot, apple and raisins. Toss and serve.
Notes
If you don’t have sour cream, you can substitute with more mayonnaise.
