Quick and easy salad. Serve immediately as a warm light lunch with the freshly cooked pasta, or chilled as a side dish. I like using a red onion to add a touch of colour.
Salmon Macaroni Salad
Servings: 7 cups
Ingredients
- 1 lb macaroni pasta, cooked and drained
- 3 celery sticks, diced
- 1 can salmon, drained
- 1 carrot, grated
- ⅓ cup red onion, diced
- 1 tbsp fresh thyme (or 1 tsp dried)
- 1 tsp dried oregano
- ½ tsp dried parsley
- ½ tsp garlic powder
- 1 tsp relish
- ⅓ cup mayonnaise
- 1 tsp red wine vinegar
- ½ lemon, juiced
Instructions
- Cook the macaroni pasta as per directions, drain.
- In a large bowl, mix all the ingredients together, and serve.
Notes
Delicious right away with warm, freshly cooked pasta. Leftovers are best served chilled.
