Orange, Cranberry and Flaxseed Muffins

Equipment

Ingredients

Dry Ingredients

  • 1 cup flour
  • cups oat bran
  • 1 cup wheat bran
  • 1 cup ground flaxseed
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1 cup brown sugar

Wet Ingredients

  • 1 large orange (peeled, cut into small pieces)
  • 1 cup milk
  • ½ cup olive oil
  • 2 eggs

Other

  • ½ cup dried cranberries (or raisins)

Instructions

  • Preheat oven to 350℉.
  • In a medium bowl, combine dry ingredients together.
  • In a separate large bowl, mix the wet ingredients together.
  • Slowly add dry mixture to the wet mixture. Mix well.
  • Mix in dried cranberries.
  • Pour into muffin cups.
  • Bake for 20-25 minutes.
