Parmesan Baked Fish with Tomatoes

Very easy recipe which can be prepared with any type of fish filets.

Parmesan Baked Fish with Tomatoes

Ingredients

  • 2 lbs fish fillet
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 lemon, juiced
  • 1 cup cherry tomatoes, halves
  • 3 tbsp fresh parmesan, grated
  • salt & freshly ground pepper to taste

Instructions

  • Preheat oven to 400℉.
  • Line baking sheet with aluminum foil.
  • Place filet skin down on baking sheet. Add the tomatoes around the fish.
  • In a small bowl, mix together olive oil, garlic, parsley and lemon juice. Pour over the fish and tomatoes.
  • Top fish with parmesan.
  • Season with salt and pepper.
  • Bake for 12-13 minutes or until the fish is flaky. Optional, broil for additional 1-2 minutes to brown the top.
