Very easy recipe which can be prepared with any type of fish filets.
Parmesan Baked Fish with Tomatoes
Servings: 4
Ingredients
- 2 lbs fish fillet
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 2 tbsp fresh parsley, finely chopped
- 1 lemon, juiced
- 1 cup cherry tomatoes, halves
- 3 tbsp fresh parmesan, grated
- salt & freshly ground pepper to taste
Instructions
- Preheat oven to 400℉.
- Line baking sheet with aluminum foil.
- Place filet skin down on baking sheet. Add the tomatoes around the fish.
- In a small bowl, mix together olive oil, garlic, parsley and lemon juice. Pour over the fish and tomatoes.
- Top fish with parmesan.
- Season with salt and pepper.
- Bake for 12-13 minutes or until the fish is flaky. Optional, broil for additional 1-2 minutes to brown the top.
