Tomato, Avocado and Feta Salad
Easy and quick salad, full of fresh flavours.
Servings: 3 servings
Ingredients
- 3 medium grapevine tomatoes, cut in large chunks
- 1 avocado, sliced
- ½ lime, juiced
- 1 tbsp fresh thyme (or 1 tsp dried)
- ⅓ cup feta cheese, crumbled
- fresh ground pepper to taste
Instructions
- In a bowl, mix the tomatoes, lime juice, thyme, and pepper. I find that there's no need to add salt since the feta cheese is naturally salty.
- Add avocado and feta, gently mix.
- Serve immediately before the avocado starts to turn brown.
Notes
Mixing all the ingredients in a bowl before presenting will allow the flavours and the juices to blend well.
